Making mint tea and taking your time.

In Tangier, tea accompanies conversation and hospitality. At home, a teapot, fresh mint and time to sit together are enough to evoke that moment. Treat this recipe as a starting point and adjust it to your tea and taste.

Prepare the ingredients

For a small 500 ml teapot, use one or two teaspoons of green tea, a generous handful of fresh mint and sugar to taste. Rinse the mint and remove damaged leaves.

The variety of tea and size of the leaves affect its strength. Begin with a modest amount and adjust it the next time you prepare a pot.

Infuse, taste and adjust

Warm the teapot with a little hot water, then empty it. Add the tea and pour in hot water. Follow the temperature and brewing guidance for your tea before adding mint and sugar to taste.

Taste before serving. If it is too strong, add a little hot water. Mix so the flavours are evenly distributed. Pour from a height you can control rather than trying to imitate a spectacular serving gesture straight away.
