The Secret of a True Moroccan Tagine in Nice

Where to eat the best tagine in Nice? The answer often lies in patience. An authentic Moroccan tagine cannot be rushed: it simmers for hours in a glazed earthenware dish, with ingredients that meld together to create a sauce of incomparable aromatic depth. At Le Délice d'Amal, 14 Boulevard Carlone, we scrupulously respect the ancestral traditions handed down from Morocco. Our chicken tagine with preserved lemon and olives has been our best-seller since we opened. The secret? A whole free-range chicken, preserved lemons we make ourselves months in advance, purple olives marinated in olive oil and zaatar, and a bunch of fresh herbs from the morning market. Our melting lamb tagine with prunes and toasted almonds is the sweet-savoury version that instantly transports our guests to Marrakech. The lamb cooks for three hours with caramelised onions, Ceylon cinnamon, fresh ginger, turmeric and prunes plumped in the cooking juices. A fine layer of almonds toasted in butter crowns the dish just before serving. We also offer a vegetable tagine for our vegetarian guests: courgettes, carrots, turnips, potatoes and chickpeas in a saffron sauce — a complete, satisfying dish that honours the flavours without compromise. Chicken Pastilla — back on the menu

Chicken pastilla is arguably the most paradoxical dish in Moroccan cuisine: a layered pastry that marries sweet and savoury, crispy and melt-in-the-mouth. This landmark of Fassi gastronomy — originating in Fès, Morocco's imperial city of food — is back on the menu at Le Délice d'Amal for spring. A true pastilla is made with warka leaves, even thinner than filo. Each translucent sheet, fine as tissue paper, is brushed with clarified butter before being layered. The filling is made from shredded free-range chicken slow-cooked in a spiced broth, scrambled eggs with onions and coriander, and almonds toasted with cinnamon and icing sugar. The cooking requires precision: the pastilla is turned halfway through to achieve a perfect golden crust on both sides. It comes out of the oven with that characteristic crunch — a crisp, golden shell that yields instantly to reveal a generous, fragrant filling. A fine dusting of icing sugar and cinnamon completes the presentation, creating the signature contrast between pearly white and amber gold. This finishing touch is not merely decorative: it is integral to the sweet-savoury balance that defines an authentic pastilla. Amal prepares it herself each morning in limited quantities. Sunday Msemen — takeaway orders

Every Sunday morning at Le Délice d'Amal, Amal rises early to prepare fresh msemen for takeaway — a tradition that has quickly won over families in the Carlone neighbourhood and far beyond. Msemen is the quintessential Moroccan flaky pancake: a supple dough kneaded by hand, folded into layers, flattened on a marble surface and cooked on a pan in sizzling butter. The surface must be golden and crispy, the inside soft and airy. This result cannot be achieved by machine — each msemen is shaped by hand, one by one. We offer three versions: plain (with homemade butter and thyme honey), cheese-filled (melted Kiri and Gouda), and kefta-filled (spiced minced meat, onions, parsley, cumin). A fourth sweet version with orange blossom honey and toasted flaked almonds is available some weekends. Msemen is perfect for a Sunday family brunch. Best enjoyed still warm, paired with a pot of mint tea — a combination found in every Moroccan household from sunrise through late morning. Sunday orders run from 7am to noon. Catering for your events in Nice

Le Délice d'Amal is launching its catering service for events in Nice and across the French Riviera. Wedding, birthday, christening, corporate reception, seminar — whatever the occasion, we bring the richness of Moroccan cuisine directly to your venue. Our catering service is built around three packages. The Oriental Buffet package includes a selection of Moroccan salads (zaalouk, taktouka, chermoula carrots), a choice of main course (royal couscous or tagine), pastries and mint tea. The Prestige package adds a pastilla starter and two tagines of your choice. The Bespoke package is designed with you according to your budget, tastes and number of guests. All dishes are prepared in our kitchen on the morning of the event and delivered hot in insulated containers. We can provide on-site service with a dedicated team if required. Our halal certification ensures all your guests can enjoy the meal in complete peace of mind, regardless of their background or beliefs. We regularly serve events in Nice, Monaco, Cannes, Antibes, Juan-les-Pins and Menton. For events over 100 guests, we ask for a minimum 15 days advance booking. The quote is free and non-binding — reply within 24 hours.

Gazelle horns and chebakia for the holidays

Moroccan pastry-making is one of the richest culinary traditions in the world. At Le Délice d'Amal, we champion it with conviction — and for the festive season, we offer a selection of artisan oriental pastry gift boxes, perfect as gifts or to share with family. Gazelle horns, or kaab el ghazal, are our signature speciality. Each piece is shaped by hand: a shortcrust pastry scented with orange blossom, wrapped around a filling of freshly ground almonds, icing sugar, cinnamon and orange blossom water. The characteristic crescent shape requires a dexterity that takes years to master — Amal has been making them since she was twelve. Chebakia is the pastry of great occasions in Morocco. Sculpted into a flower shape from a dough fragrant with sesame and spices, it is fried in clean oil then immediately dipped in a bath of warm honey and sprinkled with sesame seeds. Crispy on the outside, melt-in-the-mouth within — a balance that few pastry-makers achieve. Almond ghriba, meanwhile, is the Moroccan shortbread in its purest form: ground almonds, sugar, egg white, orange blossom water. Each piece cracks under the fingers before dissolving on the palate.
