Tagine or couscous: choosing what you feel like eating.
Slow cooking, semolina and broth: a few pointers to help you choose your next dish at Amal’s table.
Both hold an important place in Moroccan cooking, but they offer very different textures and flavours. Start with what appeals to you: a concentrated sauce surrounding meat or vegetables, or grains of semolina served with vegetables and broth.
Tagine: a slow-cooked dish
The word tagine describes both the conical-lidded vessel and the dishes cooked in it. On our menu, chicken with preserved lemon and olives brings bright, savoury flavours, while lamb with prunes and almonds combines fruit with gentle spices.
Our vegetarian tagine offers the character of slowly cooked seasonal vegetables. Ask the kitchen which accompaniments are served with the dish you choose.
Couscous: semolina, vegetables and broth
Couscous is built around steamed semolina. Broth and vegetables give the dish its character, accompanied by meat or prepared as a vegetarian version.
